  • Bring 2 cups water to a boil. Stir in 1 cup rice. Cover and reduce heat to low. Simmer 20 minutes, or until all water is absorbed.

  • Heat oil in a large skillet or paella pan over medium heat. Add rice and sauté until all grains are coated with oil. Add garlic, broth, paprika, saffron and bay leaf. Bring mixture to a boil, stirring frequently. Reduce heat to low and simmer 10 minutes.

  • Add shrimp, chorizo and peas to rice. Stir. Push mussels into rice. Cover pan and cook over low heat for 10 minutes, or until mussels open*.

  • Remove pan from heat and garnish with roasted peppers and parsley.

*Discard any mussels that do not open.
