1Rinse the lentils thoroughly. In a pot, heat 1 tbsp oil or ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds.

Add lentils, turmeric, ginger, garam masala, coriander, and salt to taste. Stir to coat.
Step 3
Add mixed vegetables and pour in 2 to 2.5 cups of water. Bring to a boil.
Step 4
Cover and simmer for 15–20 minutes, or until the lentils are soft and the veggies are tender. Stir occasionally and add more water if it thickens too much.
Step 5
While the khichdi simmers, cook the Mahatma® Ready-to-Heat Basmati Rice according to package instructions (90 seconds). Fluff the rice gently with a fork.
Step 6
Stir the heated basmati rice into the cooked lentil and vegetable mix. Cook for another 2–3 minutes until creamy and well-blended. Add lemon juice if desired.
Adjust salt or spices to taste.
Step 7
Spoon the khichdi into bowls. Garnish with fresh mint, cilantro, toasted peanuts, and a slice of lemon. Serve hot with a glass of lemon water or cooling cucumber salad on the side.
