Prepare rice according to package directions.
Cook the bacon until crispy. Drain any excess fat using paper towels. After it has cooled, crumble the bacon.
In a large bowl, combine the sour cream and mayonnaise.
Fold in the cooked rice, tomatoes and bacon.
Place lettuce in a serving bowl and top with dip. Garnish with green onions, if desired. Serve with chips or crackers of your choice.
Starring Bacon, Lettuce and Tomato: The three staples of your all-time favorite sandwich are now chopped and combined together in a delicious rice bowl. The beauty of this rice bowl is that the flavors work so well together that there is even more room to grow and experiment with things you like!
If you want a true explosion of flavors, swap in our naturally flavored and quick-cooking Jasmine Rice seasoned with garlic and olive oil. Feel free to also add in corn cut fresh right off the cob or from a can in your pantry.
Choose your favorite form of bacon whether it be vegetarian or vegan bacon, turkey bacon or good old crispy pork bacon. You can even make this a hearty breakfast recipe by adding a fried or poached egg on top to take with you on the go!
If you love all things avocado, you’re in luck! Instead of using sour cream and mayo, this recipe also goes perfectly with the creamy texture of an avocado, lime and olive oil dressing blended together and drizzled over the top.
