Take your finger food to the next level with these Jasmine Rice & Quinoa Meatball Sliders. Perfect for entertaining, make them for a family gathering or a fun weeknight meal with the kids.
Step 1
Bring 1 cup of water to a boil in a small saucepan. Add the bouillon cube and stir to dissolve. Stir in the Rice and Quinoa blend. Reduce heat to low and cover. Simmer for 15 minutes.
Step 2
Preheat oven to 400°F. Coat a large baking dish with cooking spray and set aside.
Step 3
In a large bowl, mix together all ingredients except the marinara sauce, cheese and parsley. Form into walnut-sized balls and arrange on the baking dish.
Step 4
Roast in the oven for approximately 20 minutes or until cooked through and golden brown.
Step 5
Spoon the marinara sauce on top, then sprinkle with the cheese; bake for an additional 5 minutes or until sauce is hot and cheese is melted. Remove from oven and sprinkle with parsley.
Step 6
Make sliders by slicing a dinner roll in half and placing a meatball on top, sprinkle with fresh parmesan cheese for extra flavor.
