The epitome of loaded nachos, but in dip form! Rice, taco seasoning, lean ground beef, sour cream, pickled jalapeño peppers, and tomatoes served with tortilla chips and guacamole.
In a medium saucepan combine rice, ½ packet taco seasoning and water. Bring to a boil. Reduce heat to low. Cover and cook 15 minutes.
Meanwhile in a large skillet brown beef. Add onions and remaining taco seasoning. Reduce heat to low and cook 10 minutes, stirring occasionally.
In a large bowl combine rice and sour cream. Stir in beef mixture, tomatoes and cheese. Top with jalapeños.
Serve warm with tortilla chips and guacamole, if desired.
