This simple Fried Rice dish with bacon and shrimp is just as delicious as your local Chinese take-out joint but with whole grain brown rice, now it’s even tastier. When you have the power to add your own ingredients at home you’re not only watching after your wallet but also your tastebuds.
Prepare the Mahatma® Whole Grain Brown Rice according to package directions and let it cool.
In large skillet or wok, cook the bacon until it turns crispy. Remove the bacon, crumble and set aside.
In the same skillet or wok, stir the onion and celery into the bacon drippings and stir-fry 2 to 3 minutes. Add the shrimp and stir-fry 3 to 4 minutes or until shrimp are firm and pink.
Stir in the cooked rice, reserved bacon, soy sauce, ginger, and pepper.
Make a well in the center of the rice mixture and pour in the beaten eggs. Continue to heat until the eggs begin to set. Then mix the eggs in with the rice.
Serve with additional soy sauce, if desired. Enjoy!
