Step 1
Place oven rack in middle of oven. Preheat broiler.
Step 2
In large bowl, toss together shrimp, pineapple and Tajin seasoning. Arrange in single layer on foil-lined baking sheet. Add dollops of butter.
Step 3
Broil for 5 to 8 minutes or until pineapple starts to caramelize and shrimp turn pink, start to curl and are almost cooked through. Remove baking sheet from oven. Transfer oven rack to the top. Transfer baking sheet back to oven and broil for 1 to 2 minutes or until pineapple and shrimp start to char.
Step 4

Step 5
Divide rice among 2 bowls. Top with broiled shrimp and pineapple, avocado, salsa and cilantro. Serve with lime wedges.

When buying shrimp:
– Avoid buying fresh shrimp that smells anything other than salt water.
– If you decide to go for frozen shrimp, avoid shrimp that was peeled before freezing. This may cause a loss of flavor.
You can alternatively grill for 4 to 5 minutes or boil shrimp from 5 to 8 minutes depending on the size. If you have some leftovers, you can freeze shrimp after cooking for about a month, but make sure you store them with the heads removed and shells still on, if possible.
