When choosing tomatoes, you can give your dish a new look by layering with different colored tomatoes, but many people prefer to stick to their roots and use red. You may want to try it out with a reduced balsamic glaze, as it helps to dress the dish up a bit depending on the occasion. However, feel free to stick to the recipe balsamic vinaigrette.
