Use your Thermomix® to whip up this easy and delicious rice bowl! It’s loaded with all the favorite flavors of classic empanadas.
Add onion to TM® mixing bowl and sauté at 5 minutes/120°C /speed 1. Add ground beef, garlic, tomato paste, oregano, paprika, cumin, chili powder, salt and pepper; sauté for 5 minutes.
Add rice, chicken broth, olives and lime juice. Mix well using spatula and cook for 12 to 15 minutes/100°C/speed 1.
Transfer to serving dish; top with eggs, cilantro and jalapeño slices.
For a sweet twist, add 1/4 cup raisins to the beef mixture. Garnish with tortilla strips if desired.

– Put eggs in a saucepan: leave enough space for water to circulate – and fill with cool water until it´s about 1 inch of water overtop. Place a lid overtop.
– Bring water to a rolling boil over high heat then reduce to medium-high. For soft and runny yolks and whites, you only need 2 to 4 minutes. In 6 to 8 minutes, you´ll get solid egg whites, but softer — though set — yolks. If you prefer fully set yolks and whites, leave the eggs in the boiling water for 10 to 15 minutes.
– Transfer eggs to a bowl of ice water so they do not continue cooking. This will also make it easier to peel.
