Use your Thermomix to whip up this easy and delicious rice bowl! It’s loaded with all the favorite flavors of classic empanadas.
Add onion to TM mixing bowl and sauté at 5 minutes/120°C /speed 1. Add ground beef, garlic, tomato paste, oregano, paprika, cumin, chili powder, salt and pepper; sauté for 5 minutes.
Add rice, chicken broth, olives and lime juice. Mix well using spatula and cook at 12 to 15 minutes/100°C/speed 1.
Transfer to serving dish; top with eggs, cilantro and jalapeño slices.
For a sweet twist, add 1/4 cup raisins to the beef mixture. Garnish with tortilla strips if desired.
