Love chorizo, but don’t know what to make of it, or out of it, for that matter? Well, don’t you worry, because we’ve got a list of recipes to make use of your favorite Spanish sausage. One of our favorites being this Lentils Brown Rice and Chorizo dish, which is also made with a mix of veggies including carrots, onions, and celery.
Step 1
In a large pot combine 8 cups water, rice, lentils and salt, if desired. Bring water to a boil. Boil uncovered 30 minutes until the desired texture is reached and drain excess liquid.
Step 2
In a large skillet over medium heat, cook the chorizo according to the package directions. Drain any excess fat.
Step 3
Add onions, carrots and celery and sauté until vegetables are crisp-tender, about 5 minutes. Fold in cooked rice and lentils. Serve garnished with cilantro.
