Step 1
In a medium saucepan combine rice, ½ packet taco seasoning and water. Bring to a boil. Reduce heat to low. Cover and cook 15 minutes.
Step 2
Meanwhile in a large skillet brown beef. Add onions and remaining taco seasoning. Reduce heat to low and cook 10 minutes, stirring occasionally.
Step 3
In a large bowl combine rice and sour cream. Stir in beef mixture, tomatoes and cheese. Top with jalapeños.
Step 4
Serve warm with tortilla chips and guacamole, if desired.
