If your family is craving shrimp, this Shrimp Diabla is the perfect recipe for dinner tonight!
Step 1
In heatproof medium bowl, add chipotle pepper and ancho pepper. Pour enough hot water to cover and let soak for 15 minutes or until softened. Reserve 1/4 cup soaking liquid; drain peppers.
Step 2
In large skillet set over medium heat, melt butter. Add onion and garlic; cook, stirring occasionally, for 3 to 5 minutes or until starting to soften. Transfer to blender (reserve skillet).
Step 3
Add rehydrated peppers and reserved soaking liquid to blender. Add tomatoes and salt; purée until smooth.
Step 4
Transfer tomatoes mixture to reserved skillet and bring to a simmer over medium-high heat. Cook, stirring occasionally, for 8 to 10 minutes or until sauce has thickened and flavors are married.
Step 5
Add shrimp to skillet; cook, stirring occasionally, for 3 to 4 minutes or until shrimp turn pink and curl and are cooked through.
Step 6
Meanwhile, prepare rice according to package directions.
Step 7
Serve spicy shrimp mixture over rice. Garnish with cilantro.
Serve with squeeze of lime juice, drizzle of sour cream or crumbled cotija cheese if desired.
Whether you have fresh or frozen shrimp, the preparation process is the same and you will need a few minutes of preparation before you can skewer them, stir fry them or boil them for your favorite cocktail sauce.
The first thing that you will need to do is buy shrimp that has not been peeled or deveined. Then defrost the shrimp. (Remove the shrimp from the bag and refrigerate overnight in a bowl of cold water).
Once they have thawed and before you clean the shrimp, soak them in salt water to replenish their freshness. The next step is to remove the shell of the shrimp by holding it with a few fingers with one hand and pull off its legs using the fingers of your other hand.
Peel back the shell and remove by using your thumbs. The head will come off too. Then you should remove the tail at this point by holding the body of the shrimp and pulling on it.
Devein by making a cut down the back of the shrimp using a small paring knife. You will see the vein. Pull the vein out by using your knife and rinse the shrimp. You can also use a toothpick if you would like.
Place the shrimp in a fresh bowl of water once you have them cleaned until you are ready to cook.
