Step 1
Cut off the ends of the plantains and score the skin lengthwise with a knife.

Peel the skin off carefully and slice the plantains into 1-inch-thick chunks.

Heat about 1 inch of oil in a skillet over medium-high heat.

Add plantain pieces and fry for 2–3 minutes per side, or until light golden. Do not brown them yet. Remove and drain on paper towels.

Use the bottom of a glass, a tostonera, or the back of a spoon to gently flatten each piece into a thick chip (about 1/4 inch thick).

Return the flattened plantains to the hot oil and fry for 1–2 minutes per side, until crispy and golden brown.

Remove and drain on fresh paper towels. Season with salt while still hot.

Prepare the Mahatma® Ready-to-Heat Red Beans & Rice according to package directions. Fluff with a fork and serve warm.
Step 9
Arrange tostones on a platter with a bowl of red beans & rice in the center. Serve with optional sides like guacamole, pico de gallo, and cheese cubes. Garnish with fresh parsley or cilantro, and enjoy with a cold drink!
