Prepare rice according to package directions.
Heat the oil in a large skillet over medium-high heat until hot.
Add mushrooms, asparagus and garlic. Cook and stir 3 to 4 minutes or until tender.
Add rice, nuts, green onions, lemon zest, salt and pepper. Stir until well blended and heated thoroughly.
Serve garnished with additional lemon zest, if desired.
Although easy to make, the complexity of this recipe will be discovered once you take that first bite. Sautéed shiitakes and asparagus come together pleasantly with the taste of nutty roasted pine nuts, freshly grated lemon zest, and slightly sweet green onions and garlic.
