Step 1
In a medium saucepan, mix water, milk and sugar. Stir in rice and cook over medium heat for 15 to 20 minutes, or until rice is fluffy. Set aside and let cool.
Step 2
In a large bowl, place cream cheese and mix with an electric mixer until soft. Stir in heavy cream and mix on “high” until incorporated. While mixing add powdered sugar, 1 tablespoon at a time. Add coffee and continue mixing for 3 to 5 minutes, or until fluffy and coffee is incorporated. Refrigerate for 30 minutes.
Step 3
Fold rice into the coffee cream mixture. Serve cold.
