Step 1
Cook jasmine rice and quinoa according to package directions; let cool completely.
Step 2
In a food processor, pulse dates, ½ cup coconut, and hazelnuts until finely ground.
Step 3
Place the remaining coconut in a small pan and toast over medium-high heat; let cool completely.
Step 4
Stir together Jasmine with Quinoa, date mixture, coconut oil, chocolate chips, hazelnut butter, cocoa powder, flax seeds and salt until well combined.
Step 5
Roll 2 tablespoonfuls of mixture into a ball; repeat with the remaining mixture. Roll balls in toasted coconut. Transfer to parchment paper lined tray. Refrigerate for about 30 minutes or until firm (can be refrigerated for up to 3 days)

You can also serve this as a dessert tray. Instead of rolling the mixture into balls, line a baking tin with parchment paper and mold into the shape of the desired tin size. Refrigerate and before serving, carefully take out mixture by removing the parchment paper and place onto a serving platter. Remove the paper and top with cocoa powder, toasted coconut and chopped hazelnuts. Drizzle with remaining hazelnut butter for a more show-stopping presentation and top with fresh fruit like strawberries, raspberries or blueberries.
