
Prosciutto and Green Pea Risotto
This simple and new take on your favorite Italian-inspired dish uses Mahatma® Arborio Medium Grain Rice reduced in white wine and chicken broth with Prosciutto, green peas, white pepper and fresh basil.
Step 1
In a rice cooker or instant pot, add the rice, butter, onions, prosciutto, wine, and broth. Stir the ingredients together. Cover and cook until rice cooker shuts off.
Step 2
Carefully remove the cover allowing the steam to escape. Let sit a moment.
Step 3
Add the cream, cheese, white pepper and peas into the rice cooker and stir gently until well combined and heated through.
Step 4
Serve in bowls topped with fresh basil.
