Breakfast Smoothie with Rice and Peanut Butter
Ingredients
- 1 pkg (8.8 oz) Mahatma® Ready to Heat Jasmine White Rice
- 1 can (14 oz) coconut milk
- 1 cup packed baby spinach
- 1 cup frozen cherries
- ¼ cup peanut butter
- 2 tbsp honey
- 1 cup ice cubes

Step 1
In blender, blend together rice and coconut milk until very smooth. Add spinach and cherries, and continue blending. Sweeten with peanut butter and honey and blend in high speed until the mixture completely even.Step 2
Add ice; blend for about 1 minute or until smooth.Step 3
Divide between 2 glasses. Serve topping with diced fruits or dried nuts and sprinkle some chia seeds.

This rice milkshake is made with coconut milk, which adds a thick consistency and an extra hint of flavor. If you prefer, you can blend the rice with coconut water, almond milk or your preferred plant-based milk. Water is also an option, but make sure that you’re including enough solid ingredients to get a firm shake.
Greens To Get You Going
Aside from adding an interesting color, vegetables are great in smoothies. Get your serving of greens in during breakfast without even noticing it by blending them together with the other ingredients of this milkshake – Baby spinach leaves and kale are our go-to greens. This tip comes in handy especially if you have picky eaters at home, with the sweetness of the peanut butter and honey, kids will not be able to resist this smoothie, even if it has greens in it.
You can also include algae such as spirulina or chlorella for an even more interesting color.
If you’re not into the idea of adding vegetables but love fruit, combine rice and milk with varied fruits for a whole new breakfast every day. Wild berries on Mondays, Citrus on Tuesdays, and so on… Sprinkle with nuts, ground flax, shredded coconut or chia seeds for a special boost in each serving.
