Step 1
In blender, blend together rice and coconut milk until very smooth. Add spinach and cherries, and continue blending. Sweeten with peanut butter and honey and blend in high speed until the mixture completely even.
Step 2
Add ice; blend for about 1 minute or until smooth.
Step 3
Divide between 2 glasses. Serve topping with diced fruits or dried nuts and sprinkle some chia seeds.
