Scrambled eggs, with spicy chorizo mixed with Mexican-style diced tomatoes, and cheddar cheese, served on warm tortillas.
To start, prepare the rice as per package directions. Then, heat a large non-stick skillet over medium heat.
Add chorizo and cook for 10 minutes, or until fully cooked.
Stir in cooked rice and tomatoes and simmer for 2 more minutes.
Pour eggs over the rice mixture and stir lightly to blend. Cover and reduce heat to low.
Cook 5 minutes or until eggs are set. Add cheese and stir gently.
Cook for 5 minutes or until eggs are set. Add cheese and stir gently.
Serve with warm tortillas and avocado slices (If desired).
