Step 1
Cook the rice according to package directions. Let cool completely.
Step 2
Heat oil in large skillet or wok over medium heat; cook rice, green onions, garlic and ginger for 3 to 5 minutes or until green onions are softened.
Step 3
Stir in soy sauce and 2 tbsp water; cook, stirring, for about 2 minutes or until rice is steaming hot.
Step 4
Divide rice mixture among 4 bowls. Top with falafels, kale, cauliflower, avocado and radishes.
Step 5
Drizzle with tahini; sprinkle pomegranate seeds and sumac over top.

Sauteed with green onions, garlic, and ginger, and then marinated in a bit of soy sauce, this rice mixture creates a bed of flavor which perfectly complements the true star of this rice bowl–the toppings.
What’s on top? Well, we throw in freshly chopped kale, cauliflower florets, avocado slices, and thinly sliced radishes. Tasty, right? But it doesn’t stop there, this recipe also gets an added boost from a drizzle of tahini dressing and a sprinkle of pomegranate, adding a toasted nutty flavor and bursts of sweetness to this already flavorful mixture!
