Step 1
Cook rice according to package directions.

In a blender, combine all ingredients, with the exception of the almond milk. Pulse blend until mixed, then turn on low and add almond milk. Blend until smooth and thick

Keep the batter in the blender.
Step 4
Grease a waffle iron. Make sure it is pre-heated.
Step 5
Pour mix onto the hot waffle iron. Cook until golden brown, around 7-10 minutes per waffle.
Step 6
Remove and serve hot or let cool and wrap in foil and place in the freezer for later.

Never made waffles with rice? You’re missing out! Mashed with the other ingredients, the rice helps to give it that extra fluffy texture on the inside and crispy outer edge that makes them every bit as delicious as the gluten-filled kind. The coconut sugar and blended banana give it that sugary taste without having to add in extra refined sugar. If you want a more dense pancake with a sweeter taste, feel free to toss in three Medjool dates.
If you’re feeling like adding a bit more oomph to your waffles, you can also add in a touch of ground flaxseed, sub in Jasmine Rice and quinoa or skip the quinoa and use the fragrant grains with your favorite Gluten Free protein powder — either way, you’ll need to double check the package to get the ideal jasmine rice ratio. Get yourself going in the morning and stay energized. The almond milk is our preference but sub in your favorite plant-based milk or use dairy milk if you wish.
Give yourself a few more minutes of shut-eye and prepare the mixture the night before to let sit in the fridge overnight. That way you can simply wake up and turn on the waffle iron with the batter ready to go.
Top with all of your favorite seasonal fruits like banana and berries as well as warm butter, if desired. Feel free to heat up your favorite nut butter and syrup to drizzle over the top.
