Whisk together lime juice, oil, honey, ginger and jalapeño in small bowl; set aside.
Layer rice, salmon, avocado, onions and cilantro in a mold. Chill at least 1 hour.
Just before serving, drizzle dressing over salad. Garnish with lettuce.
