Step 1
Preheat oven to 425°F.

Prepare rice according to package directions.

In a large bowl combine rice, egg whites, ½ cup mozzarella cheese, and season lightly with salt and pepper. Mix well.

Coat a 12-14 inch pizza pan with olive oil. Press rice mixture evenly onto the pan, creating a slight lip around the edge.

Bake 10 minutes. Remove from the oven.

Spread sauce over rice crust. Top with bacon and cheese.

Return to oven and bake until cheese is melted, about 10 minutes.

Let cool 5 minutes before slicing. Serve with Parmesan cheese and sliced green onions, if desired.
Substitute 2 egg whites for liquid egg whites or 1 large whole egg.
