Heat a medium wok or skillet over medium high heat. Add coconut and salt and toast, stirring constantly, until golden brown and fragrant.
In a medium bowl combine coconut and rice, breaking up any clumps. Add sesame seeds and pepper. Stir in eggs and 3 tablespoons cilantro. Mix well.
Add oil to wok and heat over medium high heat. Add rice mixture and stir fry until rice is hot and eggs are set, about 2 minutes.
Serve garnished with remaining cilantro.
For a flavor boost, drizzle with sesame oil.
