Prepare rice according to package directions; cool completely and chill.
Whisk together hoisin sauce, soy sauce, rice wine vinegar, sesame oil, and brown sugar; set aside.
Heat oil in a large wok or 12-inch skillet set over medium-high heat. Season pork with salt and pepper and stir-fry for 2 to 3 minutes or until pork begins to brown; transfer to plate.
Stir in mushrooms, bok choy, onion, ginger, and garlic. Cook, stirring for 2 to 3 minutes or until vegetables are tender-crisp.
