Parboiled Medium Grain Rice

Mahatma® Parboiled Medium Grain Rice gets its name from partially boiling the rice within its husk, not because it’s precooked, as many might think. This process helps to save more of the original vitamins and minerals found in rice, cutting the cooking time in half compared to whole grain rice varieties. This rice is the best grain length to make a show-stopping Paella or other Spanish-inspired rice meals.

Grain Characteristics

Color: Due to the husk and bran layer moving toward the middle of the kernel it has a slightly yellow/gold hue.

Texture: When cooked, this medium grain variety offers a tender and slightly chewy texture in contrast to longer grains which cook up fluffier and more separate such as traditional white rice or Jasmine Rice.

Taste: Parboiled rice has a delicious and subtle nutty flavor, somewhere in between the neutral taste of white rice and the nutty flavor of brown rice.

How to Cook Medium Grain Parboiled Rice

The ideal water to rice ratio for these Authentic Grains is 2:1, which means 2 cups of water per each cup of rice. Cook by following the stovetop method and simmering for about 20 minutes, right after water starts to boil. It is not recommended to cook this product in the microwave.

Specialty Rice for Paella

As parboiled medium grains contain slightly more starch than longer grains, it is ideal for using in dishes like Authentic Seafood Paella recipe or a Vegetarian Roasted Harvest Paella.

When cooking paella, it is essential to use grains that will toast on the outside but not dry out on the inside. Likewise, it is important to use rice that absorbs the flavor of the ingredients and cooking liquid such as water, stock or broth. For this reason, medium grain varieties are the ideal choice!
