This recipe can be easily adapted to any tastes or preferences by switching out any desired fruits or nuts that are in season. Not a fan of pecans? Use sliced almonds or walnuts. Can’t find mango? Use another fresh fruit like peaches or grapes. You can even add avocado if you want a touch of color and a smooth texture.

How do you know if a Mango is ripe? If you’ve never bought a mango or even had a mango, don’t worry. The first step is to look for a more reddish or yellowish color in some spots rather than completely green. However, not all change color, so the most important step is to feel if it has a soft interior. It should feel similar to a ripe peach that is not too mushy but also not as hard as a rock.
Have leftover rice in the fridge you need to finish up? Use it up in this recipe or in another nice Rice Bowl.
