Step 1
In large bowl, toss chicken, lime juice, oil and adobo seasoning; marinate for 20 to 30 minutes.

Preheat grill to medium-high; grease grill well.

Remove chicken from marinade; discard marinade. Grill chicken for 10 to 12 minutes, turning once, until cooked through and instant-read thermometer inserted in center reads 165°F. Let rest for 10 minutes and thinly slice against the grain.

Divide rice mixture among 2 bowls. Top with grilled chicken and avocado. Garnish with onion, cilantro and sour cream.
