Step 1
In a small saucepan set over high heat, combine rice, milk, sugar, vanilla, cinnamon, and salt; bring to boil. Reduce heat to low. Cover and cook for 15 to 25 minutes or until tender. Let cool completely.
Step 2
Layer one-quarter of the rice pudding into serving dishes. Top with half of the diced pineapple. Layer one-quarter of the rice pudding over top. Top with half of the diced mango. Repeat layers once. Refrigerate parfaits for 30 to 60 minutes or until chilled.
Step 3
Whip cream with icing sugar until stiff peaks start to form. Garnish each parfait with a dollop of whipped cream
Garnish parfaits with fresh cherries, toasted coconut or chopped almonds.
