Roasted Harvest Veggie Paella
Ingredients
- 1 1/2 cups Mahatma® Valencia Short Grain Rice
- 1/2 lb Brussels sprouts, trimmed and halved
- 3 cups chopped butternut squash
- 2 carrots, chopped
- 2 parsnips, chopped
- 1/3 cup olive oil, divided
- 1 tsp each salt and pepper, divided
- 1 cup dry white wine
- 1/2 tsp saffron threads
- 1 onion, diced
- 1 red bell pepper, diced
- 2 tbsp finely chopped fresh thyme
- 1 tbsp finely chopped fresh rosemary
- 4 cloves garlic, thinly sliced
- 1 tsp smoked paprika
- 3 1/2 cups sodium-reduced vegetable broth
- 2 plum tomatoes, diced
- 2 tbsp finely chopped fresh parsley
- 1 tbsp lemon juice
Instructions
Feed the whole family with this delicious, fall-inspired veggie paella made with butternut squash, carrots, parsnips, and Brussels sprouts.
Step 1
Preheat oven to 425°F. Toss together Brussels sprouts, squash, carrots, parsnips, 3 tbsp olive oil, and 1/2 tsp each salt and pepper. Arrange on large parchment paper–lined baking sheet; bake for 25 to 30 minutes or until golden brown and tender. Set aside.
Step 2
Meanwhile, stir together white wine and saffron threads; let steep for 10 minutes. Set aside.
Step 3
Heat remaining oil in large high-sided skillet set over medium heat; cook onion, bell pepper, thyme, rosemary, garlic, and remaining salt and pepper for 3 to 5 minutes or until slightly softened.
Step 4
Stir in rice and smoked paprika; cook for 2 to 3 minutes or until well coated. Stir in broth and wine mixture; bring to boil. Reduce heat to medium-low; cook for 10 minutes.
Step 5
Stir in roasted vegetables and tomatoes; cook for 8 to 10 minutes or until most of the liquid is absorbed, rice is tender and veggies are heated through.
Recipe Tips
Sprinkle with parsley and lemon juice before serving.
Drizzle paella with balsamic glaze and crumbled goat cheese for a festive presentation.
