Timing and technique is everything with traditional paella. Be sure to continue stirring when mentioned and add the ingredients as they are directed below.
To start, bring 2 cups water to a boil. Stir in 1 cup rice. Cover and reduce heat to low. Simmer 20 minutes, or until all water is absorbed.
Next, heat oil in a large skillet or paella pan over medium heat. Add rice and sauté until all grains are coated with oil. Add garlic, broth, paprika, saffron and bay leaf. Bring mixture to a boil, stirring frequently. Reduce heat to low and simmer 10 minutes.
Add the shrimp, chorizo and peas to rice. Stir. Push mussels into rice. Cover pan and cook over low heat for 10 minutes, or until mussels open*.
Remove pan from heat and garnish with roasted peppers and parsley and enjoy!
