Perfect as an on-the-go snack or meal, these tasty oven-baked rice muffins made with a few kitchen essentials like flour, white rice, butter, and salt, will ensure you never go hungry even on your busiest days!
Step 1
Preheat the oven to 400º F. Spray a 12-cup muffin tin pan with non-stick cooking spray or use cupcake liners.
Step 2
In a medium bowl, beat butter, eggs, and sugar until smooth.
Step 3
Stir in the rice, onions, and ½ cup nuts.
Step 4
In another medium bowl, combine the flour, baking powder, and salt.
Step 5
Stir the dry ingredients into the rice mixture just until incorporated. Do not overmix.
Step 6
Fill prepared muffin tins two-thirds full with batter. Sprinkle remaining nuts on top. Bake 15-18 minutes or until the muffins are golden brown.
Step 7
Let cool in the pan for two minutes then remove muffins and transfer to a rack to cool completely.
For nut allergies, simply omit the nuts.
