Perfect as an on-the-go snack or meal, these tasty oven-baked rice muffins made with a few kitchen essentials like flour, white rice, butter, and salt, will ensure you never go hungry even on your busiest days!
Preheat the oven to 400º F. Spray a 12-cup muffin tin pan with non-stick cooking spray or use cupcake liners.
In a medium bowl, beat butter, eggs, and sugar until smooth.
Stir in the rice, onions, and ½ cup nuts.
In another medium bowl, combine the flour, baking powder, and salt.
Stir the dry ingredients into the rice mixture just until incorporated. Do not overmix.
Fill prepared muffin tins two-thirds full with batter. Sprinkle remaining nuts on top. Bake 15-18 minutes or until the muffins are golden brown.
Let cool in the pan for two minutes then remove muffins and transfer to a rack to cool completely.
For nut allergies, simply omit the nuts.
Make this Gluten Free by swapping in rice flour or favorite alternative.
If you’ve never tried baking with your favorite rice, it’s a tasty trick that adds another layer of both texture and flavor to your muffins! The key is to use quality rice, we’ve chosen Mahatma® White Rice, but feel free to use Brown Rice for a more whole grain touch. This is also a great opportunity to use up your leftover rice sitting in the fridge from yesterday’s dinner.
This version uses everyday all-purpose flour, but if you’re looking to make them fully Gluten Free, simply swap it out for rice flour or your favorite alternative. We’ve also used both nuts and onion, but if you’re a cheese lover, add your favorite cheese in with the rice mixture to give your own personalized touch. You can also omit the nuts if you have any family members with nut allergies or you don’t have any on hand.
