Traditional Paella with Chorizo & Shrimp
Ingredients
- 1 cup Mahatma® Valencia Short Grain Rice
- 2 tbsp olive oil
- 2 cloves garlic, chopped
- 3 cups chicken broth
- 1 tbsp. smoked paprika, optional
- pinch of saffron threads
- 1 bay leaf
- ½ pound large shrimp, peeled and deveined
- ½ pound live mussels, cleaned
- 4 oz. Spanish chorizo, sliced
- ½ cup frozen peas
- roasted red pepper, cut into strips
- flat leaf parsley, chopped

Step 1
Next, heat oil in a large skillet or paella pan over medium heat. Add rice and sauté until all grains are coated with oil. Add garlic, broth, paprika, saffron and bay leaf. Bring mixture to a boil, stirring frequently. Reduce heat to low and simmer 10 minutes.Step 2
Add the shrimp, chorizo and peas to rice. Stir. Push mussels into rice. Cover pan and cook over low heat for 10 minutes, or until mussels open*.Step 3
Remove pan from heat and garnish with roasted peppers and parsley and enjoy!
