Step 1
Next, heat oil in a large skillet or paella pan over medium heat. Add rice and sauté until all grains are coated with oil. Add garlic, broth, paprika, saffron and bay leaf. Bring mixture to a boil, stirring frequently. Reduce heat to low and simmer 10 minutes.
Step 2
Add the shrimp, chorizo and peas to rice. Stir. Push mussels into rice. Cover pan and cook over low heat for 10 minutes, or until mussels open*.
Step 3
Remove pan from heat and garnish with roasted peppers and parsley and enjoy!
