Step 1
Freeze the fresh tuna for 24 hours.
Step 2
Cook the rice according to package directions and leave to cool.
Step 3
Cut the tuna into small cubes. If you do this when it is still a little frozen it will be easier.
Step 4
Chop the onion and gherkins very finely. Grate a dessert spoon of ginger root.
Step 5
Add everything to the tuna. Pour the soy, oil, sesame seeds, salt and pepper and marinate for 10 minutes.
Step 6
Mash the avocado and season with lemon juice and salt.
Step 7
Serve with the help of a ring. First the rice, then the marinated tuna tartar and finally the avocado. Crown with some green shoots.
