This salad is full of bold flavors! Mahatma® Whole Grain Brown Rice tossed with green onion, mushrooms, bean sprouts, jicama, crunchy peanut butter, garlic, wine vinegar, sesame oil and parsley – wholesome and irresistible! We guarantee you will be coming back for more.
Step 1
Prepare the brown rice according to package directions. Step aside and let cool.
Step 2
Slice vegetables and toss all salad ingredients.
Step 3
For the Spicy Peanut Sauce, whisk together crunchy peanut butter, soy sauce, red wine vinegar, sesame oil and chicken broth. In a separate bowl, mix the dry ingredients: crushed garlic, ginger root and minced parsley. Pour the liquid part to the dry ingredients and whisk until well blended. Store in a container and refrigerate until the salad is ready. Tip: for an extra chunky sauce, add some crushed peanuts.
Step 4
Serve the greens, rice and remaining salad ingredients and pour the peanut dressing over. Chill for 1 hour before serving. Decorate with bean sprouts and fresh parsley.

We call it Asian salad because of most of the ingredients used for the dressing and the soybean sprouts, but if you want a more oriental inspired dish, swap the mushrooms with shiitake.
