This salad is full of bold flavors! Mahatma® Whole Grain Brown Rice tossed with green onion, mushrooms, bean sprouts, jicama, crunchy peanut butter, garlic, wine vinegar, sesame oil and parsley – wholesome and irresistible! We guarantee you will be coming back for more.
Prepare the brown rice according to package directions. Step aside and let cool.
Slice vegetables and toss all salad ingredients.
For the Spicy Peanut Sauce, whisk together crunchy peanut butter, soy sauce, red wine vinegar, sesame oil and chicken broth. In a separate bowl, mix the dry ingredients: crushed garlic, ginger root and minced parsley. Pour the liquid part to the dry ingredients and whisk until well blended. Store in a container and refrigerate until the salad is ready. Tip: for an extra chunky sauce, add some crushed peanuts.
Serve the greens, rice and remaining salad ingredients and pour the peanut dressing over. Chill for 1 hour before serving. Decorate with bean sprouts and fresh parsley.
Rice bowls are the perfect solution for any last-minute lunch or to clean out your fridge. Almost any leftover can be mixed into the flavorful all-in-one bowl. Imagine enjoying that deliciousness with your favorite salad greens.
Although this recipe is not exactly made from greens, it does follow the salad rice bowl principles: fresh vegetables, perfectly cooked Mahatma® Rice and a fun dressing that adds the magic touch. Accompanied by diced chicken, this recipe has everything you’ve been craving for lunch. Our Whole Grain Brown Rice adds a nutty hint and a chewy texture to the bowl that pairs perfectly with the crunchy peanut dressing.
We call it Asian salad because of most of the ingredients used for the dressing and the soybean sprouts, but if you want a more oriental inspired dish, swap the mushrooms with shiitake.
Dressings are the perfect complement for salads as they usually add the extra flavor that keeps the balance and blend all together with the remaining ingredients. They’re always easy to make and will help you personalize your salad bowls. You could even toss the same ingredients and have a new taste just by stirring in a different dressing.
This peanut dressing has the right amount of spiciness to satisfy your heat cravings. Make a larger serving and have it ready in your fridge to spice up your favorite meals. We would definitely try it with our Jasmine Rice Salad with Asian Chicken recipe.
