Is there a more iconic appetizer than the classic Spinach Dip? We didn’t think so. Our take on the traditional recipe uses a warm combination of melted sharp cheddar cheese, spinach, and cream cheese, seasoned with nutmeg and garlic all mixed in with our Mahatma® White Rice for a more hearty touch. Trust us, you’ll love it! Spread some on a cracker and see for yourself.
Step 1
Prepare the rice according to package directions. Let cool and set aside.
Step 2
Coat a 2-quart microwave-safe serving dish with non-stick cooking spray.
Step 3
In a large bowl combine the cream cheese, garlic and nutmeg. Beat until light and fluffy. Stir in the rice, spinach and ¾ cup cheddar cheese. Spread mixture into prepared dish. Top with remaining cheddar cheese. Microwave 4 minutes, or until cheese is bubbly. Serve hot with crackers or chips.

With only six simple ingredients this delicious dish can be thrown together in the drop of a hat. Heat together the rice, cream cheese, spinach and Cheddar seasoned with nutmeg and garlic and you’re all set. Don’t complicate things, use frozen spinach but feel free to use fresh spinach if you have it on hand. Just remember that when using fresh spinach, check the proper proportions and bag sizes.

Additional stir-ins: crispy crumbled bacon, chopped water chestnuts, chopped artichoke hearts and crumbled blue cheese. Want to turn up the heat? Drizzle Sriracha sauce over the top!
