  • Prepare rice according to package directions.

  • Peel and dice one avocado and set aside. In a large bowl, mash remaining avocado.

  • Add rice, tomatoes, garlic, onion, cilantro, jalapeño and lime juice and blend well.

  • Fold in reserved mango and chopped avocado. Season with salt, if desired. Serve with tortilla chips scoops or your favorite chip.
