Preheat oven to 425°F. In medium bowl, whisk together olive oil, garlic, 1/2 tsp salt, black pepper and chili flakes. Add broccoli; toss until well coated. Arrange evenly in single layer on foil-lined baking sheet. Roast for 15 to 20 minutes, or until tender and lightly charred.
Meanwhile, using broth as cooking liquid, prepare rice according to package directions. Fluff with fork. Stir in roasted broccoli, Cheddar cheese, butter and remaining salt.
Sprinkle with parsley before serving.
Stir in 2 cups shredded rotisserie chicken for added protein if desired.
