Preheat oven to 400°. In medium bowl, combine chicken, bread crumbs, onion, egg, garlic, salt, pepper and celery seed. Shape mixture into 1-inch balls and arrange on rimmed baking sheet lined with parchment paper.
Brush meatballs with buffalo sauce; bake for 20 to 25 minutes or until cooked through.
Meanwhile, heat rice according to package directions. Serve meatballs over rice with blue cheese dressing, pickles, celery and carrot sticks.
