    Ingredients

    • 2 cups Mahatma® Fluffy Rice
    • 1 can (15 oz) black beans, drained and rinsed
    • 3 tbsp fresh cilantro, chopped and divided
    • 3 tbsp lime juice
    • 3 cloves garlic, minced
    • 1 tsp dried oregano
    • 1/2 tsp ground cumin
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • Lime wedges, for serving

    Instructions

    • Step 1

    • Prepare rice according to package directions. Fluff with fork.

      Step 2

    • Combine rice with black beans, 2 tbsp cilantro, lime juice, garlic, oregano, cumin, salt and black pepper.

      Step 3

    • Garnish with remaining cilantro. Serve with lime wedges.

      For added flavor, top each serving with sliced avocado, pickled red onion and a dash of hot sauce.
