Jasmine Rice Greek Power Bowl
Ingredients
- 1 pkg (8.8 oz) Mahatma® Jasmine Rice
- 3/4 cup Greek yogurt
- 1 ripe avocado, halved, pitted, peeled and mashed
- 1/2 cup cucumber, grated and squeezed dry
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 2 tbsp fresh dill, finely chopped
- 2 tbsp fresh parsley, finely chopped
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup grape tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 3/4 cup black olives, pitted
- 2 cups rotisserie chicken, chopped
- 4 cups loosely packed spinach
- 1/3 cup feta, crumbled
- 1/3 cup Greek vinaigrette, prepared

Step 1
Prepare rice and quinoa according to package directions.
Step 2
Meanwhile, make avocado tzatziki. In a medium bowl, stir together yogurt, avocado, grated cucumber, oil, lemon juice, garlic, dill, parsley, oregano, salt, and pepper until blended.
Step 3
Toss together chickpeas, tomatoes, cucumber, red onions, black olives, chicken, spinach, feta, and Greek vinaigrette. Top rice with Greek salad mixture and drizzle with avocado tzatziki.

For a vegetarian option, omit chicken or substitute with a plant-based meat substitute.

To make this sauce, grate and squeeze the cucumber and mix with the mashed avocado, spices, oil, and yogurt. Whisk vigorously until all ingredients are combined – it’s as simple as that!
