Jasmine Rice Greek Power Bowl
Ingredients
- 1 pkg (8.8 oz) Mahatma® Premium Jasmine Blends, Jasmine Rice & Quinoa
- 3/4 cup Greek yogurt
- 1 ripe avocado, halved, pitted, peeled and mashed
- 1/2 cup cucumber, grated and squeezed dry
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 2 tbsp fresh dill, finely chopped
- 2 tbsp fresh parsley, finely chopped
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup grape tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 3/4 cup black olives, pitted
- 2 cups rotisserie chicken, chopped
- 4 cups loosely packed spinach
- 1/3 cup feta, crumbled
- 1/3 cup Greek vinaigrette, prepared

Step 1
Prepare rice and quinoa according to package directions.
Step 2
Meanwhile, make avocado tzatziki. In a medium bowl, stir together yogurt, avocado, grated cucumber, oil, lemon juice, garlic, dill, parsley, oregano, salt, and pepper until blended.
Step 3
Toss together chickpeas, tomatoes, cucumber, red onions, black olives, chicken, spinach, feta, and Greek vinaigrette. Top rice with Greek salad mixture and drizzle with avocado tzatziki.

For a vegetarian option, omit chicken or substitute with a plant-based meat substitute.

So, what’s tzatziki? It’s a traditional Mediterranean sauce with a yogurt and cucumber base. Olive oil and fresh herbs are just two of the other added ingredients. Our version includes all the classics with the addition of creamy avocado. It’s a breeze to make and really worth it.
To make this sauce, grate and squeeze the cucumber and mix with the mashed avocado, spices, oil, and yogurt. Whisk vigorously until all ingredients are combined – it’s as simple as that!
