Ginger Pork Fried Rice
Ingredients

- ¼ cup hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 1 tsp brown sugar
- 2 tbsp canola oil
- 12 oz boneless pork loin or pork tenderloin, thinly sliced
- ¼ tsp salt
- ¼ tsp pepper
- ½ lb shiitake mushrooms (stem removed and sliced)
- 4 baby bok choy, chopped
- 1 onion, diced
- 4 tsp ginger, minced
- 2 cloves garlic, minced
- ¾ cup frozen peas, thawed
- 4 green onions, thinly sliced
- 2 tbsp pickled ginger, chopped

Step 1
Prepare rice according to package directions; cool completely and chill.
Step 2
Whisk together hoisin sauce, soy sauce, rice wine vinegar, sesame oil, and brown sugar; set aside.
Step 3
Heat oil in a large wok or 12-inch skillet set over medium-high heat. Season pork with salt and pepper and stir-fry for 2 to 3 minutes or until pork begins to brown; transfer to plate.
Step 4
Stir in mushrooms, bok choy, onion, ginger, and garlic. Cook, stirring for 2 to 3 minutes or until vegetables are tender-crisp.
Step 5
Stir in rice and cook, stirring for 2 to 3 minutes or until well coated. Stir in sauce; bring to a boil. Stir in peas and cook for 2 to 3 minutes or until rice is hot, pork is cooked through, and veggies are just tender.
Step 6
Sprinkle with green onions and pickled ginger.
