Shake things up this year and get creative with those turkey leftovers by making these simple and delicious after-holiday burritos.
Step 1
In a bowl, add tomatoes, 1/2 cup white onion, 1 tablespoon cilantro, chile, lime juice, and 1/2 teaspoon salt. Mix and set aside.
Step 2
Heat olive oil in a large skillet over medium heat. Add rice and sauté until it is golden, about 3-5 minutes remaining. Add white onion, garlic and cilantro. Sauté for 1 minute. Add chicken broth and bring to a boil. Cover, reduce heat to low and cook 15 to 20 minutes, or until rice is cooked and liquid is absorbed. Fluff with a fork.
Step 3
Place 1/2 cup cooked rice and ½ cup turkey down the center of a warmed tortilla. Fold the tortilla sides inwards, then fold top and bottom sides holding each fold as you roll into a tight wrap. Repeat for all burritos. Serve with pico de gallo on the side.
