Enjoy a comforting cup of this warm rice milk accented with vanilla and cinnamon! Use fluffy Mahatma® White Rice for best results.
Step 1
In a saucepan, combine white rice, 2 1/2 cups water, 1 1/2 cups milk and cinnamon stick; bring to boil. Cook for 20 minutes, stirring occasionally, or until rice is tender and most of the liquid is absorbed. Remove cinnamon stick.
Step 2
Stir in evaporated milk, remaining milk, sugar and vanilla. Return to boil; cook, stirring often, for 5 minutes.
Step 3
Transfer mixture to a blender, in batches if needed; purée until smooth.
Step 4
Divide among 8 mugs. Garnish each serving with a pinch of cocoa and cinnamon.
If desired, drizzle with dulce de leche or chocolate syrup before serving.

– No cinnamon sticks? Add 1/2 teaspoon of ground cinnamon after preparing the rice.
– No evaporated milk? Evaporate the milk yourself! Measure out 60% more milk than necessary ( for this recipe, you´ll need a little more than 4 3/4 cups), bring milk to a boil, and reduce — stirring constantly to avoid burning.
– No sugar? Sub in brown sugar, panela, or raw sugar. You can also use honey, maple syrup, or agave; just remember that these alternatives are both sweeter and more viscous – so you may want to reduce the amount.
