Prepare rice according to package directions; let cool completely. Cover and refrigerate until chilled.
Meanwhile, in large wok or skillet set over medium heat, cook bacon for 8 to 10 minutes or until starting to crisp around edges. Stir in green onions, cumin and coriander; cook for 1 minute.
Increase heat to medium-high heat. Stir in rice; cook for 4 to 6 minutes or until rice is slightly warmed.
Stir in soy sauce; cook, stirring, for 1 minute. Stir in tomatoes; cook, stirring, for 2 to 3 minutes or until rice and vegetables are heated through. Season with salt and pepper. Garnish with cilantro.
Top with crumbled queso fresco or feta cheese if desired.
