Made with sticky rice, this vegetarian take on a Korean-style rice bowl is topped with quick pickled veggies flavored with soy sauce, sesame oil and fresh ginger, and finished with sesame seeds and a soft-boiled egg
Step 1
Prepare rice according to package directions. Keep warm.
Step 2
In a bowl, toss together the cucumber, carrots, radishes, rice wine vinegar, and salt and sugar. Allow to marinate 5-10 minutes; drain well.
Step 3
In a small bowl mix soy sauce, sesame oil, ginger and green onions. Add reserved vegetables and toss to combine.
Step 4
Heat olive oil in a large skillet over medium heat. Add spinach and season with salt and pepper. Using tongs, quickly sauté spinach just until wilted, about 2 minutes. Drain any excess liquid.
Step 5
Divide the rice in bowls. Top each serving with pickled vegetables, spinach and a soft-cooked egg. Sprinkle with sesame seeds. Serve with the gochujang sauce.
