Made with sticky rice, flavored with soy sauce and sesame oil, this vegetarian take on a Korean-style rice bowl is topped with quick pickled veggies and a soft-boiled egg.
Prepare rice according to package directions.
In a bowl, toss together the cucumber, carrots, radishes, rice wine vinegar, and salt and sugar. Let the mixture stand for at least 30 minutes; drain well.
In a small bowl mix soy sauce, sesame oil, ginger and green onions. Combine mixture with vegetables.
Divide the rice among 4 bowls. Top each serving with pickled vegetables, spinach and a soft-cooked egg. Sprinkle with sesame seeds. Serve with the gochujang sauce.
