
Bibimbap Rice Bowl
Made with sticky rice, flavored with soy sauce and sesame oil, this vegetarian take on a Korean-style rice bowl is topped with quick pickled veggies and a soft-boiled egg.
Step 1
In a bowl, toss together the cucumber, carrots, radishes, ½ cup rice wine vinegar, and ½ tsp each salt and sugar. Let the mixture stand for at least 30 minutes; drain well.
Step 2
Meanwhile, cook Mahatma® Short Grain Rice according to package directions. On the same pot, mix rice with soy sauce, sesame oil, ginger, and remaining vinegar, salt and sugar. Fold in green onions.
Step 3
Divide the rice among 4 bowls. Top each serving with pickled vegetables, spinach and a soft-cooked egg. Sprinkle with sesame seeds. Serve with the gochujang sauce.

This sauce will take the dish to the next level so, if your taste buds are up to discovering new flavors and textures, stop by your closest Asian market and get yourself some Gochujang. Sriracha or sambal oelek hot sauce would also add the spice to this rice bowl.
