Made with sticky rice, this vegetarian take on a Korean-style rice bowl is topped with quick pickled veggies flavored with soy sauce, sesame oil and fresh ginger, and finished with sesame seeds and a soft-boiled egg
Prepare rice according to package directions. Keep warm.
In a bowl, toss together the cucumber, carrots, radishes, rice wine vinegar, and salt and sugar. Allow to marinate 5-10 minutes; drain well.
In a small bowl mix soy sauce, sesame oil, ginger and green onions. Add reserved vegetables and toss to combine.
Heat olive oil in a large skillet over medium heat. Add spinach and season with salt and pepper. Using tongs, quickly sauté spinach just until wilted, about 2 minutes. Drain any excess liquid.
Divide the rice in bowls. Top each serving with pickled vegetables, spinach and a soft-cooked egg. Sprinkle with sesame seeds. Serve with the gochujang sauce.

Not that we need an excuse to prepare an outstanding meal but, you could gather your friends and host an exotic party tonight. Welcome your guests with Vegetarian Sushi and serve this Bibimbap as the main dish. Sounds like a plan to us.
Gochujang is Korean sauce made from a mixture of chilies, and contrary to what you might be thinking, it’s not only spicy but a bit sweet. This sauce will take the dish to the next level so, if your taste buds are up to discovering new flavors and textures, stop by your closest Asian market and get yourself some Gochujang. Sriracha or sambal oelek hot sauce would also add the spice to this rice bowl.
If you want to make it a whole-grain meal, swap in Mahatma® Jasmine Brown Rice – its nutty flavor and chewy texture will add a different touch to the recipe. If you’re confused about the difference in rice varieties between short and long grain or between Jasmine vs Basmati Rice, make sure to take a look at our Cooking section for a guide to our rice varieties.
